    I said, press shift+click then when you drag, a line tool appears. Use it to point the direction of the water vapor

    I also recommend that you don't use cold materials e.g ice or snow for cooling, it won't work. If you want an easy cooling method, add converter then add water in the converter, then put it in the tunnel where water vapor enters then the converter will change the water vapor into water, so technically it's not really cooling but it's an example

    You're not using the fan correctly. You need to actually use the line tool for the fan to control the direction the fan blows. Press the fan wall in the wall section on the right then on the fan, press shift+click, then a line will show up that you can drag. Drag it to a direction. I recommend for power plants you add a lot of fans so that the water vapor moves fast. Still a +1 for effort
